RECIPE: Cucumber Tomato & Avocado Salad For People Who Hate to Cook
The cilantro is entirely optional!
If, like me, cilantro tastes as though someone shoved an entire bar of Dial soap down your throat, SKIP THE CILANTRO. It goes with this super delicious, summery recipe, but again, DON’T DO THE CILANTRO if it makes you want to heave. Instead, use dill. Other than that, you’re going to be so smitten with this tastebuds-on-blast recipe, you might want to share it with your friends and other people you actually like. It’s super easy, wildly refreshing, and requires only a few minutes of chopping.
Ingredients:
1 English cucumber, sliced
1 lb Roma tomatoes, chopped
3 ripe avocados, diced
1/2 red onion, sliced
1/4 cup of cilantro, chopped or 1/4 cup dill, chopped
2 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
Salt and black pepper to taste
The hard part is already done!
Directions:
Place the cucumber, tomatoes, avocados, onion, and cilantro in a large salad bowl.
Toss with olive oil, lemon juice, salt and pepper.
That’s it—voilà! You could throw a bit of crumbled feta in there if you wanted to, but for my money, I prefer to taste the freshness of the ingredients without introducing a strong variable. For me, the feta overwhelms the delicate creaminess of the avocado and the fresh “green” taste of the cucumber. But I have seen feta added, and people appear to enjoy it.
