No-Bake Energy Balls For When You're Moving
This is what we should have made this week, but didn't.
In honor of all the things we should have been smart enough to do this week, but didn’t, I give you ENERGY BALLS. You can make them ahead, freeze them, stick them in the fridge for about two weeks without having to adopt them as pets and give them names. You can also make tasty substitutions—butterscotch chips or raisins instead of chocolate chips. Cashews. Pistachios. You name it.
Best part? They’re REALLY easy. When you’re moving, you need easy.
Ingredients:
3/4 cup rolled oats
3/4 cup steel-cut oats
1/2 cup honey or more as needed to make your ingredients stick together
1 tbsp vanilla extract
1/2 cup sweetened coconut
1 cup Rice Krispies cereal
1/2 cup ground flax seeds
1/2 cup peanut butter
Chocolate chips per taste (anywhere from a handful to 1/2 cup)
Instructions:
Combine ingredients into large bowl. Mix very well.
Refrigerator for one hour. Add more honey or peanut butter if the mixture isn’t sticky enough.
Spray your hands with cooking spray to roll the mixture into small 1”-2” balls. Keep refrigerated until needed, or freeze them for later.
